Born Ugly

Anyone involved in the world of food realizes that we Americans are parochial when it comes to our seafood. It's a boneless, skinless fillet world - in this neck of the woods, generally battered and deep fried. If there are steaks, they are generally from a few fish, such as salmon or tuna.

There is a whole world of tasty seafood that we are passing up on, and we have to change that:
Much like the nose-to-tail movement, sustainable seafood asks diners to learn to love new flavors and texture—because a hog isn’t all chops, and the ocean isn’t stocked with center-cut salmon steaks.
The rest of the world is feasting on our bounty.

Close to Home

The Chipotle E. coli outbreak has hit here in Amherst. According to a report from WIVB news:

“The food item that caused was distributed and served at the end of October that caused the illness is probably no longer at that Chipotle restaurant, it’s already been consumed or disposed of because we have not identified any subsequent cases and neither have the health departments in the other five states,” Gale Burstein, Erie County Commissioner of Health, said.

I have to say I have never eaten there. This just doesn't appeal to me.
