Anyone involved in the world of food realizes that we Americans are parochial when it comes to our seafood. It's a boneless, skinless fillet world - in this neck of the woods, generally battered and deep fried. If there are steaks, they are generally from a few fish, such as salmon or tuna.
There is a whole world of tasty seafood that we are passing up on, and we have to change that:
